I looked into the reason, and found that everything is the same, except that the commercial bun added 2 preservatives and 2 flour enhancers. so, enhancers make a ton of difference in the texture. I've used methods such as tong zhong (cooking the flour), sourdough, overnight fermentation, and adding a little modified tapioca starch when I made conventional breads. guess I might as well use them on keto breads too!

I’ve been using this along with TVP to make my own impossible burgers and so far they have been amazing in texture and flavor! I have yet to try making hotdogs or pepperoni with it, as it takes some trial and error. It takes a bit of kneading to get the texture just right. But overall I’m very pleased with the quality and taste in my recipes.

I use this to bake low carb yeast bread. It's easy to make with a bread machine. The loaf comes out with great texture and it tastes similar to whole weat bread. Yesterday I tried making pizza crust with Vital Wheat Gluten and it came out great. I added 100g of it to 100g Almond flour, half a pack of active yeast, 3 tbsp olive oil and warm water. P.S : It bakes a bit longer in the oven than regular flour

I found a good recipe on a website called "veggie society" that has steps for seitan "steaks". I mix it in a blender with some red or black beans or lentils and tomato sauce, then knead, boil, cool and marinade in liquid aminos, then fry on a non-stick pan. It tastes like little meat loaves. So while seitan isn't a full protein unlike meat sources and tofu, it is still really good. I have a very easy time meeting my protein goals including vital wheat gluten to my diet few days of the week. Also it is low in calories. Amazing. I've tried the recipe by The Pot Thickens - Quick vegan chicken and seitan deli. I am going to try making it in an Indian style soon and the recipe I am going to use is by Showmethecurry. It looks promising and I am excited. If you've never eaten meat like me the texture might take getting used to but the health benefits outweigh the adjustment period. However, you don't just have to make vegan meats. You can add small amounts to bread doughs, donut doughs, etc.
